As previously posted,I redyed my hair again the other day. I have learned that this particular dye, SPLAT brand, will NOT totally bleach out; so if I ever want to go a lighter color, I'll have to let it grow out and cut off the previously dyed length.

Lol..it was so hot in my apartment (while I was baking cheesecakes) last night that I ended up sweating blue all over the neckline and shoulders of the t-shirt I was wearing! That's another hair dye hazard, it really bleeds out when wet for the first week or so; yet, overall, this color lasts for a long time!

Exercise note: took a rest day yesterday as my ankle was achy and just slightly swollen and puffy again. Now the weather is rainy; so may not get outside yet today, and not sure if B and I will have time for the gym this evening either. Oh well, there is always tomorrow.

I've registered for a couple upcoming local short distance races--- the Cotton Row 10K (on Memorial Day in Huntsville) and the Burningtree Beast 15K (in Decatur middle of June). Am trying to stay hopeful about being back to longer distance runs and events again soon.

Details: Margarita Cheesecake with salty pretzel crust. Top spread lightly with lime curd, edged with sugar crystals, and garnished with candy jell fruit slices*.

It looks good; it smells good; the filling tasted nice before baking, but I can't give you a taste tester's review on the final product until tomorrow!

MARGARITA CHEESECAKE

crust:
1c pretzel crumbs
1/3 c melted butter (am wondering if cutting in soft butter might work better than melted?)
2 tb sugar

combine and press into 9" or 10" pan; bake 350 degrees 10 minutes.

filling:
4(8 oz) pkgs cream cheese
1 1/4 cup sugar
dash vanilla
1 1/4 c sour cream
1/2 cup sweetened condensed milk
1/4 c tequila
1/4 c orange liquor
1/3 c key lime juice
4 eggs

Place cream cheese into bowl, use mixer and beat on medium high, scraping sides and bottom of bowl often, until completely smooth. Beat in vanilla and sugar well. Add eggs one at a time, beating after each addition. Add milk and sour cream. Stir in juice and liqueur.

Bake 350 degrees for 1 hour. Cool before garnishing. Chill before serving.

*the candy fruit a was nice addition for appearance, but superfluous for taste; maybe use a real fruit slice or a simple curl of lime rind as garnish? But I have to say, the lime curd was the perfect finishing touch!
